Hi, I’m Amadeo Falce — founder of Blue Dove Coffee.I’m a lifelong coffee lover, but I didn’t take the traditional path into the coffee world. Before building Blue Dove, I served as a combat medic in the U.S. Army. After the military, I spent years searching for something that gave me the same sense of purpose — something that brought people together and left a positive mark on their day.

A REVOLUTION

That “something” ended up being coffee.

Coffee became a part of my daily ritual long before Blue Dove existed. Growing up in an Italian family in the Midwest, sharing coffee meant slowing down, talking, laughing, connecting. When I moved to New York City, I noticed how transactional the coffee experience had become — and I knew I wanted to bring back the warmth and connection that originally made me fall in love with it.

Fast-forward to 2023: I built my first coffee cart entirely by hand with my brother. Welding, electrical, plumbing — we did it all ourselves. Before most people were awake, I’d be up at 2:30 a.m. grinding beans, setting up the cart, and pouring lattes in Union Square Park.No days off. No shortcuts. Just passion, discipline, and a belief that a cup of coffee can change someone’s day.

From that tiny cart, Blue Dove Coffee was born.

Amadeo’s Story

I started Blue Dove with one goal: to create coffee that makes people feel something.Peace. Connection. Clarity. Trust.Those values became the foundation of our brand — and the meaning behind the name Blue Dove.


In the beginning, it was just me, my brother, and a dream. But the community built around Blue Dove grew fast. Customers shared their stories. Videos went viral. People lined up before sunrise. Pretty soon, a simple cart evolved into a full movement — one fueled by authenticity, quality, and the kind of energy NYC rarely slows down for.


Everything we make starts with intention.We source premium coffees through ethical partners, roast in small batches, and obsess over flavor until it’s exactly right. Whether it’s our Bronx Blend, Harlem Hues, Brooklyn Bloom, or our specialty anaerobic offerings, we design coffee that’s rich, balanced, and memorable.

My love for coffee made me realize there was a real need for a brand that combined premium quality, minimalist design, and emotional connection. I wanted every product — from our beans to our drinks to our cold brew cans — to reflect intention.

We sampled countless coffees, tested roast profiles, and partnered with incredible producers from regions known for world-class beans. We’re committed to transparency and excellence, which is why we only work with trusted farms and roast at facilities known for precision and quality control.

Our beans are roasted in small batches to ensure clarity, balance, and depth in every sip. You’ll taste clean flavor notes, zero bitterness, and a smooth finish — the kind of quality you expect from a high-end coffee bar, not just a bag on a shelf.
